Abstract
A review concerning occurrence of alkoxypyrazines in nature and their sensorial properties. Pyridines belong to important flavour substances containing nitrogen. Besides alkylpyrazines, they represent the secon d most important group of such compounds and a play a key role in most vegetables and other types of commodities of plant origin.
