The density of aqueous glucose, fructose, and invert sugar solutions w
as measured as a function of mass fraction and temperature. After the
respective mass fraction had been determined at the Institut fur Techn
ologie der Kohlenhydrate an der Technischen Universitat Braunschweig w
ith an uncertainty of 0.002%, the density was hydrostatically measured
at the Physikalisch-Technische Bundesanstalt Braunschweig with a rela
tive uncertainty of 1 . 10(-5). Polynomials are given for the density
as a function of concentration and temperature, and for practical appl
ications, also for the density as a function of mass fraction and temp
erature and for mass fraction as a function of density and temperature
. The results will be presented to the International Commission for Un
iform Methods of Sugar Analysis (ICUMSA) at its 22nd meeting in Berlin
from May 24 to 29, 1998.
