Abstract
This review deals with phytase (myo-inositol hexakisphosphate phosphoh ydrolase) and covers microbiological sources, phytase occurence in pla nts and animals, its purification, physico-chemical and molecular prop erties. Protein engineering of phytase and potential enzyme applicatio ns are discussed.
