A method for the detection of soya protein concentrates in sausages, u
sing sitosterol as a marker, was elaborated. The method comprises the
rapid extraction of non-saponifiable lipids and their analysis by gas
chromatography/mass spectrometry. Levels of 2.5% and 5% soya protein c
oncentrates could be clearly detected by the method.
