An experimental study of the convective drying of thin layer of two fo
od agricultural products (oranges peels and beet pulp) has been carrie
d out with a blower in air controlled conditions. This study has permi
tted to determined the reactions of these products under different dry
ing conditions and to establish the empirical correlations giving the
drying rate for each product. The sorption isotherms of these products
have been obtained experimentally by equilibrium method with sulfuric
acid solutions or with saturated salt solutions.
