Abstract
The significance of glutamate as flavour enhancer is occasionally disp uted. Media reports make consumers feel unsecure about the product. Th is was reason enough to discuss the facts at a conference in Hohenheim . The participants arrived at the conclusion that glutamate in food, e specially far seasoning, is safe and compatible with 'healthy' nutriti on. The most important results are presented.
