Pervaporation is an emerging membrane-based separation technique which
is very promising, for instance, for aroma recovery. Computer simulat
ions of the behavior of large-scale pervaporation units for aroma reco
very indicated that aroma concentrates can be produced by using this t
echnique. For four of the five aroma compounds investigated, the degre
es of recovery were high. The simulations showed that some process par
ameters, e.g., temperature, degree of aroma folding, and membrane mate
rial, strongly affect the performance of the process.
