Continuous cultures of a recombinant Lactococcus lactis subsp. lactis
strain were performed to display the effect of the fermentation pH on
the specific growth rate and plasmid stability. The proportion of plas
mid pIL252 bearing cells decreased exponentially with the number of ge
nerations. The influence of the pH on the rate of loss of plasmid pIL2
52 and on the specific growth rate of L. lactis IL2682 was described b
y second order polynomial equations. Optimal pH for the growth and pla
smid stability were 6.39 and 6.41 respectively.
