Abstract
Contrary to previous documentation,it has been shown that nisin soluti on is not stable to autoclaving at pH 2. It is most stable at pH 3 (< j% activity loss at 115 degrees C 20 min(-1)), while all values below and above this show a marked decrease in activity, especially those fu rthest removed from pH 3.
