Abstract
A survey is given on the technical possibilities for species identific ation in meat and meat products. The application of electrophoretic, i mmunological and molecular biological methods is described. This artic le is focused on the investigations which were carried out at the inst itute for Meat Hygiene and the Federal Institute for Meat Research in Kulmbach, Germany.
