Changes in the free monosaccharide fraction and non-casein nitrogen du
ring the 3-month storage of five batches of commercial UHT milk were s
tudied. Batches with high residual proteolytic activity showed a consi
derable increase in galactose, N-acetyl glucosamine and N-acetyl galac
tosamine levels during the storage period, whereas their glucose and m
yo-inositol contents remained unaltered. In batches with slight or neg
ligible proteolytic activity no changes in the free monosaccharide fra
ction were observed.
