Alkoxypyrazines belong to the group of important N-heterocyclic compou
nds characterized as flavour substances. Their strong aroma and extrem
e richness give the possibility of setting aromatic and fragrant compo
sitions of various types and predetermines the commercial success of s
ynthetically produced alkoxypyrazines. Synthetic methods for alkoxypyr
azines are surveyed. The most frequently used method is the reaction o
f chloropyrazines prepared in various ways with sodium or potassium al
koxides.
