The adhesion of glucose heated at diffrent temperatures ranging from 1
60 to 250 degrees C on commercially available enamel-coated steel plat
es has been investigated. During heating, several chemical modificatio
ns of glucose occur and strong adhesion to the substrate develops. The
adhesion of glucose at high temperature can be strongly reduced by us
ing fluoroalkylsilane-treated plates. In order to obtain quantitative
