Abstract
The stereoselective reduction of 2-pentanone by alcohol dehydrogenase from Thermoanaerobium brockii was studied at controlled water activity and at different reaction temperatures. The reaction rate increased w hen water activity was increased from 0.32 to 0.96 and when raising th e temperature from 5 degrees C to 40 degrees C. The enantioselectivity , E, reached a plateau value at high water activities. The enantiosele ctivity increased with decreasing reaction temperature. (C) 1998 Elsev ier Science B.V.
