Mixtures of sucrose and sodium cyclamate (Na-cycl) were studied in the
presence of orange aroma. Equisweet mixtures of the sweeteners were c
omposed, which accounted for the observed synergistic effects between
sucrose and Na-cycl. Sensory perceptions of combinations of these mixt
ures and an orange aroma were further described by quantitative descri
ptive analysis (QDA) to study possible interactive effects between the
sweeteners and the orange aroma. Flavor profiles of a 100% sucrose so
lution and a 100% Na-cycl solution, both in the absence of orange arom
a, significantly differed for the attributes chemical and aftertaste.
Addition of orange aroma provided the solutions with a more distinct f
lavor and leveled out differences observed between sucrose and Na-cycl
solutions. Further comments on the attribute aftertaste showed simila
r terms for the different solutions; orange, chemical, and mint were m
ost often mentioned for solutions containing the orange aroma. The aft
ertaste of solutions containing relatively more Na-cycl was mainly des
cribed as bitter.
