H. Kodad et al., STUDY OF THE MUTAROTATION OF D-GLUCOSE IN AQUEOUS-SOLUTION, Comptes rendus de l'Academie des sciences. Serie 2, Mecanique, physique, chimie, sciences de l'univers, sciences de la terre, 317(3), 1993, pp. 307-310
The variation of Huggins constant k' with time, when D-glucose is diss
olved in water, may be due to the presence of D-glucose anomers (alpha
and beta) in aqueous solution. The intensity changes seen for several
IR bands for different times enabled us to distinguish between the vi
brations of the two anomers alpha and beta and to follow the mutarotat
ion kinetic of D-glucose.
