Purification of date juice for liquid sugar production

The aim of this work was to optimise methods for purifying date juice (a si gnificant source of sugars) to meet liquid sugar requirements. The potentia ls of ultrafiltration for decolorization, and electrodialysis for demineral isation, have been studied as alternatives to ion exchange resins. Electrod ialysis gives very promising results, especially with decolorized or partia lly decolorized juices.
