Abstract
A culture medium was designed for maximal production of biomass and intrace llular catalase by a potent enriched culture of Saccharomyces cerevisiae CF R-201. Growth conditions for catalase production were optimal at 30 degrees C for 72 h, in shake flasks on a rotary shaker (200 rpm). The effect of va rious carbon and nitrogen sources on catalase production were also studied. S. cerevisiae CFR-201 produced five times more intracellular catalase than a local baker's yeast strain. The cell free extract used as source of cata lase removed 99.9% residual H2O2 from cold pasteurized milk at 45 degrees C for 1 h. (C) 1999 Elsevier Science Ltd. All rights reserved.
