The conversion of soluble starch to cyclomaltohexaose (alpha-CD), cycl
omaltoheptaose (beta-CD), cyclomaltooctaose (gamma-CD) and cyclomalton
onaose (delta-CD) by cyclodextrin glycosyltransferases (E.C. 2.4.1.19)
from Bacillus spp. and bacterial isolates was studied. The results sh
ow that delta-CD was formed by all the enzymes investigated in the ran
ge of 5%-11.5% of the total amount of alpha-, beta-, gamma-, and delta
-CD produced.
