Abstract
A highly purified invertase from a thermophilic fungus Thermomyces lan uginosus showed enhanced activity when incubated with exogenous protei ns. These proteins also stabilized the invertase when incubated at 50 degrees C, 4 degrees C and -20 degrees C. However, none of these prote ins stabilized the invertase at or above 55 degrees C, the temperature of inactivation. This property was found to be specific for the therm ophilic invertase, as no such activation was observed for the mesophil ic invertases from yeasts.
