Antioxidant properties of desferrioxamine E, a cyclic trihydroxamate p
roduced by microorganism, were A tested and compared to those of desfe
rrioxamine B and butylated hydroxyanisole (BHA). Desferrioxamine E exh
ibited significant antioxidant effects in linoleic acid emulsions as w
ell as in emulsions of linoleic acid and beta-carotene. In concentrati
ons of 100 ppm, the effect of both desferrioxamines in linoleic acid e
mulsion was equal to that of BHA. The antioxidant activity of the desf
errioxamines in emulsions of beta-carotene and linoleic acid was signi
ficantly higher than that of BHA. In addition, the initial rate of bet
a-carotene destruction was significantly lower when desferrioxamines w
ere added to the emulsion.
