Nine lactating buffaloes during early lactation were divided into 3 gr
oups using 3 x 3 Latin square design. Animals fed diets consisted of b
erseem hay (BH) and concentrates (30:70). The 3 experimental concentra
tes used were: (1) concentrate feed mixture (CFM), (2) Feather meal mi
xture (FM), (3) Offal meal mixture (OM). Pooled milks, each period, we
re collected for analysis and manufacturing Domiati cheese. Cheese sam
ples were stored at room temperature for 3 months. Production of milk,
4% fat-corrected-milk and milk composition were not altered (P>0.05)
by treatments or lactation period, except fat and ash contents (P<0.05
). FM and OM diets altered milk and cheese amino acids (P>0.05). Organ
oleptic properties for cheese, yield and composition of cheese were si
milar for the 3 groups except fat. Storage period significantly affect
ed organoleptic properties (P<0.05) except colour, and, also, affected
cheese composition (P<0.01).
