The effect of pH on the activity of M-4-lactate dehydrogenase purified
from skeletal muscles of loach acclimated over 25 days to 5 degrees C
(<<cold>> enzyme) and to 18 degrees C (<<warm>> enzyme) was studied.
The pH optima for the two forms of the enzyme coincide. However, in th
e pH range 5,0-6,5, the activity of <<cold>> enzyme shows greater stab
ility. This conclusion is confirmed by the kinetical studies of pH inf
luence on the activity of two forms of lactate dehydrogenase. The spec
ific activity of <<cold>> enzyme is higher than the <<warm>> one.
