Three anthocyanins were isolated from the acidified methanolic extract
of blue flowers of Vicia villosa Roth (hairy vetch) by a combination
of ion-exchange resin and gel filtration. Mostly on the basis of homo-
and heteronuclear two-dimensional nuclear magnetic resonance techniqu
es, their structures were elucidated to be the O-alpha-rhamnopyranosid
e-5-O-beta-glucopyranosides of petunidin (71%), delphinidin (12%), and
malvidin (9%), respectively.
