Abstract
The alpha-amylases of Streptomyces sp. IMD 2679 produced yields of 79% (w/w ) maltose from starch by reactions other than simple hydrolysis. The enzyme s also had a low affinity (K-m 8.0-8.2 mm) for maltotriose and each possess ed a temperature maximum in the range 60-65 degrees C.
