Abstract
4 analogs of naturally occurring gallotannins have been synthesized upon ac ylation of sucrose by 2, 3, 6 and 8 galloyl groups. In a simple test using the DPPH radical, the antioxidant activity of such esters appears proportio nal to the number of the galloyl units. (C) 1999 Elsevier Science Ltd. All rights reserved.
