Abstract
Enterococcus faecium CRL35 produces the bacteriocin enterocin CRL35, which is active against Listeria monocytogenes. In this work, the reduction of L. monocytogenes by enterocin CRL35 during goat cheese manufacturing was dete rmined. Results indicate that when 10,400 AU of the bacteriocin was added t o goat cheese, a decrease of 9-log cycles of the pathogen population was fo und at the final of the ripening period. Furthermore no change in cheese qu ality, determined by the titrable acidity, pH and total solids, was observe d when the antimicrobial substance was present.
