Mass relations and moisture equilibria between the embryo with scutellum an
d the endosperm part were determined for non-sprouted and sprouted seeds of
wheat, barley and triticale at four relative humidities. The relative mass
es of the embryos with scutellum increased with increasing sprouting level
from approximately 5.0% to 10.0% of the whole seed. The moisture contents o
f the embryos with scutellum were dependent on the sprouting level, increas
ing with increasing sprouting level by up to 21%. The moisture contents of
the endosperm parts did not change significantly with sprouting.
