The extracellular polysaccharide produced by Lactobacillus rhamnosus strain
C83 was found to be composed of D-glucose and D-galactose in a molar ratio
of 2.3. The primary structure of the polysaccharide was shown by sugar ana
lysis, methylation analysis, FARMS, partial acid hydrolysis and nuclear mag
netic resonance (NMR) spectroscopy to consist of a pentasaccharide repeatin
g unit having the following structure:
