The residues of dairy industry represent a potential source of richness poo
rly exploited till now. Their correct reuse could solve a serious problem o
f dairy industry coming from the restrictions applied by law for industrial
residues. Separative technologies using membranes (microfiltration,ultrafi
ltration, reverse osmosis, electrodialysis) allow the complete reuse of res
idues reducing to the minimum the considerable environmental impact connect
ed to this productive activity.
These innovative technologies, already successfully applied in some North E
uropean countries, would allow to maximize process yields, qualifying in a
commodity way the recovered products that can therefore be assigned to alim
entary and non alimentary transformation industry, according to their desir
ed purity grade. The utilization of innovative technologies would allow the
acquiring of know-how useful both for environmental matters and for the de
crease of production costs.
