Abstract
Two alterations of "ricotta cheese" have been described. The first is a yellow-oranged decoloration of ovine "ricotta cheese" and is due to the growth of Planococcus citreus alone or in combination with Alte rnaria alternata. The second is due to the development of a CO2 producing strain of psychrotr ophic and saccharolitic clostridium, not identified.
