Protein inhibitors of proteinases in seeds: 1. Classification, distribution, structure, and properties

Current data are reviewed on the distribution, properties, primary structur e, specific activities, and classification of protein inhibitors of protein ases isolated from plant seeds. Nine families of inhibitors are classified according to their primary structure, the number and location of disulfide bridges, and the location of reactive sites.
