Abstract
Lactoperoxidase was purified from goat milk whey by one-step cation-exchang e chromatography. The purified lactoperoxidase yielded a single protein ban d corresponding to a molecular weight of about 80 kDa by SDS-PAGE analysis. Analysis of heat stability showed that treatments of goat milk at high tem peratures completely inactivated goat lactoperoxidase.
