Energy characteristics of structures in aqueous solutions of sucrose

Structures arising in sucrose solutions of various concentrations are model ed. A computer simulation by the molecular mechanics method proves the exis tence of three aqueous sucrose structures, which depends on the ratio betwe en water and sucrose molecules. The calculated data are in good agreement w ith the experimental results obtained by different methods.
