In this work the results obtained by means of ultrasonic, photon correlatio
n spectroscopy, viscosity and Raman measurements on trehalose-water solutio
ns, are presented. The ultrasonic data show that the mixing process is not
ideal and that the water-trehalose interaction strength, because of the sat
uration of II-bonds sites, decreases by increasing concentration. Furthermo
re, the temperature behaviour of shear viscosity in a strong-fragile patter
n, and the analysis of depolarized Raman scattering spectra, relative to th
e supercooled region, evidence the noticeable kinetically fragile character
of this system.
