The paper provides basic information on the industry of fragrant and flavou
ring substances. These substances are used in perfuming various products, i
n particular cosmetics and detergents, as well as in aromatizing food produ
cts. The current situation and problems in this field are discussed with re
spect to Czech Republic. Activities of the Department of Organic Technology
of the Institute of Chemical Technology, Prague in research and implementa
tion of new technologies are described.
