Abstract
The influence of casein micelle size on zeta potential and rennet gelation properties is studied. Heating these micellar suspensions in the presence o f beta-lactoglobulin is also found to influence rennet gel properties. (C) 1999 Published by Elsevier Science Ltd. All rights reserved.
