Abstract
The effect of heat-denatured whey protein on the properties of rennet-treat ed casein micelles was investigated. Aggregation of renneted casein micelle s was inhibited by heat-induced denaturation of whey proteins. The effect w as partially reversed by increasing the temperature or the calcium ion conc entration. (C) 1999 Elsevier Science Ltd. All rights reserved.
