Solid complexes of apple pectin with casein were prepared from aqueous blen
ds of the components at 12 Von stainless steel electrodes, The composition
of complexes which separated on the anode was linearly dependent on the com
ponent ratio in the solution and practically independent of pH. Thermal sta
bility of the complexes slightly depended on their composition as proved by
thermal analysis.
