Abstract
After a short introduction regarding historical characteristics of NIR spectroscopy, the physical and chemical principles are shown and a br ief report on the instrumentation is given. The Authors point out the most recent applications in postharvest in addition to the chemometric al non-linear techniques. At the end of the report the NIR possibiliti es are shown to develop on-line systems for sensory and quality evalua tion.
