Abstract
The structure of a new anthocyanin from Salvia uliginosa petals has been id entified as delphinidin 3-O-[6-O-(p-coumaroyl)-beta-D- glucopyranoside]-5-O -[4-O-acetyl-6-O-malonyl-beta-D-glucopyranoside] using mass spectroscopy an d NMR. This compound constitutes the anthocyanin component of the pigment r esponsible for blue flower colour in S. uliginosa. (C) 1999 Elsevier Scienc e Ltd. All rights reserved.
