The article presents a survey of biosensors applied in the determination of
selected monosaccharides (glucose, fructose, galactose and xylose), disacc
harides (saccharose, lactose, maltose and lactulose) and polysaccharides (s
tarch, glycogen and pullulane). A concise description of constructional det
ails of a biosensor is included: connection of the biological part to the p
hysicochemical transducer. The enzyme systems used in detection of sacchari
des are described in detail. Attention was directed to the application of o
xidative enzymes (oxidase or dehydrogenase) in detecting monosaccharides, f
urther to the construction of multienzyme biosensors for the detection of d
i- and polysaccharides and to practical applications of biosensors mainly i
n food analysis.
