Abstract
New bioactive epimeric derivatives of oleuropein have been detected in oliv e fruits and structurally characterized by H-1 and C-13 NMR. These hydrolyt ic metabolites, obtained by enzymatic catalysis, can be molecular microcomp onents, present in Mediterranean food, table olives, and olive oil, respons ible for complex sensorial attributes and for pathogen natural defense.
