In this paper the AA propose a simple analytical method to control the
presence of natural and synthetic colours in ''gnocchi'' samples. The
colouring agents were identified by TLC and spectrophotometry after e
xtraction using acetone or chloroform. The results of the investigatio
n of 22 samples are presented. E102 (1 sample) and curcuma-dyes (6 sam
ples) have been found.
