Abstract
Spoilage can be evaluated by separating and determining biogenic amines by various techniques, notably high-performance liquid chromatography. Previou s studies have not taken into account how the muscle tissue matrix affects the assay. We demonstrate a matrix effect in plaice and whiting and show th at it changes during spoilage. This effect should be taken into account whe n plotting regression lines relating the quantity of amine to the biogenic amine/internal standard ratio.
