Capillary electrophoretic methods were developed to investigate the possibi
lity of prolamin identification of four rice varieties i.e. Thai white frag
rant rice KD105, Korkhor15, Thai white rice A, and a Chinese white rice H2O
. live extraction methods were compared and varietal identification of rice
prolamins was successfully accomplished by capillary electrophoresis in pH
2.5, sodium phosphate buffer containing 20 % acetonitrile and 0.05 % hydro
xypropylmethylcellulose.
