Abstract
Capillary electrophoretic methods were developed to investigate the possibi lity of prolamin identification of four rice varieties i.e. Thai white frag rant rice KD105, Korkhor15, Thai white rice A, and a Chinese white rice H2O . live extraction methods were compared and varietal identification of rice prolamins was successfully accomplished by capillary electrophoresis in pH 2.5, sodium phosphate buffer containing 20 % acetonitrile and 0.05 % hydro xypropylmethylcellulose.
