The production of slaughter pigs is a particularly important branch of Hung
arian agriculture. Indication of this can be observed in the fact that ig m
eat accounts for 20-22% of all agricultural exports from the country; furth
ermore,, this branch also plays a determinant role in ensuring the commodit
y supply for domestic consumption (the present consumption level being 45 k
g per capita). In the past 25 years (1974-1999) particularly specific chang
es have taken place in the production of slaughter pigs in Hungary; these m
anifest themselves extensively in the respective variations of keeping tech
nology, mainly in procedures related to animal feeding and nutrition. The a
uthors provide a detailed account of the investigations performed on variou
s farms for the purpose of exploring solutions and variations for work orga
nisation to be considered optimal from the economic aspect. The essential t
hrust of the work organisation study was oriented towards analysis of the s
tructure of working time. This analysis involved the processing of the char
acteristic features of the most commonly applied fattening techniques (i.e.
, feeding methods), which were also analysed by means of the detailed recor
ding of data relating to the working day. In the course of these investigat
ions the role of the various factors influencing quality was applied as an
important aspect, as was the unearthing of experience and observations rela
ted to the introduction into use in Hungary of the EUROP meat classificatio
n system.
