The principal aim of the potato storage is to keep their quality as high as
possible. The best quality of the potato that can be obtained is that can
be achieved is to maintain the quality level present at the time of initial
storage. Some basic requirements that can be applied to all potato storage
are: maintaining a uniform temperature and high relative humidity, removin
g excessive heat, and providing air movement. Those can be obtained by usin
g an automated control system. This paper describes the temperature variati
on inside the potato cell and also this temperature Variation is correlated
with external temperature.
