Water activities in aqueous solutions of xylose, fructose, and glucose with
sodium chloride were measured and correlated with an empirical equation. P
arameters for the equation were obtained, and, from them, values of water a
ctivity were calculated with an average relative deviation of less than 0.1
7% for the three ternary systems studied.
