Abstract
Two bacteriocin-producing strains of Pediococcus parvulus were isolate d from minimally processed vegetables. Recombinant DNA techniques reve aled the presence of the pediocin PA-1 gene in both strains. Biochemic al analysis confirmed the production of pediocin PA-1 and excluded the presence of other bacteriocins.
